Hot Water Pastry

Introduction & method

Hot water pastry is traditionally used when hot to make Pork Pies, but it can also be used cold and is a quick and easy way to make gorgeous pastry for savoury pies. You can substitute butter for lard if you want to make vegetarian pies.

Hot Water Pastry Recipe

Bring the water to the boil and add the lard - it helps if you cut the lard into small pieces before adding to the water. Simmer until the fat has fully melted. Combine the flour and the salt, and then carefully pour in the water and lard. Mix until everything is blended, and then tip it out onto a work surface and knead it a bit (but be careful, it will be hot!). Put it on a plate and cover with plastic film. Place in the fridge to cool. 

This pastry will last about a week in the fridge, and several months if frozen.
