Strawberries and Cream with a Twist

Introduction & method

Like, and possibly thanks to, Wimbledon, strawberries and cream are more or less synonymous with summer in Britain. The first few weeks of July, strawberries are in season and Wimbledon sells almost 200,000 portions during the tournament. 

Strawberries and Cream with a Twist Recipe

Prep the Strawbs


Wash the strawberries and pull off the leaf and stem. Use a paring knife to cut out a cone where the leaf was attached. This is called hulling and is done for purely aesthetic reasons. You might want to cut the larger strawberries in half.

Assemble


Place a mound of cream in the centre of a small bowl and arrange the strawbs artistically around/on top of the cream. Drizzle with balsamic vinegar and grind some black pepper over it. Told you it was easy.

 some strawberries
 some clotted cream
 a splash of balsamic vinegar
 a few grinds of black pepper

PLUS

If you can't get clotted cream and don't want to make your own, you can use ordinary double (heavy) cream or whipping cream. It's up to you whether you whip it so it's thick, or leave it runny.
