Chip Shop Curry Sauce

Chip shop curry sauce is a uniquely British thing - it's a pale imitation of the rich gravies that we know and love from the Indian sub-continent. It's quick and easy to make, and delicious poured over chips.

To make the chip shop curry


Peel and chop the onion, and gently sauté it in vegetable oil over medium heat. When softened, add the spices, stir them in, turn the heat down to low and let them cook for a couple of minutes. Add the yogurt and the stock. Cook for another five minutes.

Whizz everything into a blender until you have a smooth paste the consistency of paint. Return to the pan, and check the seasoning. If your sauce seems too runny, you can sift in some flour to thicken it.

 1 medium onion
 250 ml plain yogurt
 250 ml chicken stock
 2 tsp curry powder
 1 tsp ground ginger
 1 tsp ground turmeric
 1 tsp ground cumin
 half a tsp red chilli flakes

PLUS

Vegetable oil for cooking the onions. Flour to thicken the sauce.
