Crispy Pancakes

Introduction & method

It's almost impossible to talk about 'crispy pancakes' without adding the word 'Findus' at the start. I'm pretty sure Findus invented them, and they were a great favourite with kids. There were chicken ones, cheesy ones and fishy ones, but now I'm recreating the minced beef and onion crispy pancake.

Minced Beef and Onion Filling


FInely chop the onion and lightly brown it in oil on medium heat. Turn up the heat a little and add the minced beef - break it up and keep it moving so it gets browned on all sides. Add the stock, parsley, pepper and tpmatp puree. Stir well, turn down the heat and simmer for 20 minutes. Taste for seasoning and adjust if necessary. Sift in some flour and stir well to get it integrated. We want a thickish gravy consistency. Let it cook for a further 5 minutes. Remove from heat, put it in the fridge and let it cool completely.

Make the Pancakes


In a jug or bowl, mix the salt and flour, then whisk in the egg. Add the milk and whisk until the batter is smooth. Let it stand for 30 minutes. Melt a little butter in an 18cm (7 inch) frying pan. Pour in a bit of batter and swirl it round so it coats the bottom of the pan. When the bottom is set, turn the pancake over  and cook for a minute or two. Your first pancake will always be a disaster. Don't worry about it, eat it as you work. Cook the rest of the pancakes and pile them up on a small plate. They don't need to be kept warm, in fact we want them cold.

Assemble the Pancakes


Arrange your assembly line - you want flour on a plate, the beaten egg in a wide shallow bowl and the breadcrumbs on a plate. Take 1 pancake and paint the edge with beaten egg. Place a dollop of filling on one half of the pancake, fold the pancake over and press the edge to seal it. Dip the pancake in the flour, get it coated all over, then coat it in egg, and then breadcrumbs. Shake off any excess breadcrumbs.

Cook the Pancakes


Heat a little oil in a frying pan. When the oil is hot enough to make a small chunk of bread sizzle when you put it in, carefully lower in a pancake. Let it cook gently for 2-3 minutes each side until the breadcrumbs are golden. Yopu want to avoid getting the breadcrumbs too brown. Drain on kitchen paper and serve.

 pinch of salt
 knob of butter, for cooking

 450 grams minced beef
 500 ml beef stock
 1 medium onion
