Cheese Toastie | Grilled Cheese sandwich

Introduction & method

When I was a kid we had cheese on toast, but never as a sandwich with a lid on. That came later, probably with the invention of the Breville™ Sandwich Toaster. I found them too greasy, but you don't need the machine, you can actually make them on a griddle or skillet. Just amazing!

Bread


You can make this with regular sliced bread, but a high-quality uncut loaf, preferably sourdough, makes the effort worthwhile. Cut the loaf at 45° to get a longer slice. You will need 2 slices of bread per person, and be careful not to cut them too thick otherwise the toast will be burning while the cheese is still thinking about melting.

Cheese and Onion


The choice of cheese(s) is up to you, based on what's available where you live and what you like. I used mature cheddar, red Leicester, and brie for stretchiness. Mozzarella is also an excellent stretchy cheese. You need to grate the hard cheeses - I wouldn't attempt that with the brie! Peel and finely chop the onion and mix it with the grated cheese.

Cook It


Butter your bread slices on one side only. Heat a cast-iron griddle plate or other frying pan on medium heat. When it's warm place the bread, buttered side down, in it/on it. Let it cook for a few minutes until browned, then remove from the heat. Spread the toasted side of 2 slices of bread with mustard and sprinkle with grated cheese and onion. Place slices of brie or mozz over the other cheese and the remaining bread toasted side down. Butter the upward-facing bread and place it on the griddle face down. While it's cooking, butter the top surface. Flip it over after 4-5 minutes and continue cooking until the other side is golden brown and the cheese is melting.

 25 grams mature cheddar cheese
 25 grams red Leicester cheese
 25 grams brie or mozzarella cheese
 half a small onion
 4 tsp butter
 2 tsp Dijon mustard
