
Lebkuchen have become very popular at Christmas time over the last few years. But they are so easy to make and so delicious you can make them any time.

120 grams unsalted butter
160 grams plain white (all-purpose) flour
100 grams ground almonds
70 grams demerara sugar
1 tsp baking powder
4 tsp ground ginger
half a tsp ground cinnamon
half a tsp ground cloves
half a tsp salt
2 egg yolks
2 tbsp golden syrup
100 grams icing sugar
2 tbsp boiling water
