Air Fryer Chicken

Introduction & method

We're all familiar with southern fried chicken, but here's a cheaper and healthier way to make it. It's cheaper because it's cooked in an air fryer, which is the secondmost economical cooking device in your kitchen. And it's healthier because it uses only a tiny amount of oil. But it still has a good crunchy coating and it drips with juice!

Air Fryer Chicken Recipe

Marinate the Chicken


Put the chicken pieces (including skin) into a bowl or zip-lock bag, and cover it with buttermilk. Leave to marinate in the fridge for at least 3 hours.

Mix the Coating


Mix all the herbs and spices together in a screw-top jar, then mix with the flour in a large bowl.

Coat the Chicken


Take each piece of chicken out of the marinade and dredge it into the seasoned flour. Try to get as much coating as possible to stick to the chicken pieces - press it on with your fingers if you need to. Put the chicken on a wire rack and leave in the fridge for 30 minutes.

Cook the Chicken


Heat your air fryer to 200°C (392°F). Take the chicken from the fridge and dredge the pieces in the flour again. Shake off any excess. Spray the chicken pieces and the air fryer basket with oil. Cook the chicken for 10 minutes then turn it over, spray again and cook for another 10 minutes. The chicken should reach an internal temperature of 74°C (165°F).

 8-9 pieces chicken thighs, drumsticks or wings, bone in, skin on
 500 ml buttermilk or milk with a teaspoon of lemon juice added
COATING
 250 grams plain (all-purpose) flour
 half a tbsp dried basil
 half a tbsp dried thyme
 1 tsp oregano
 1 tbsp celery salt
 1½ tbsp ground white pepper
 1 tbsp ground black pepper
 1 tbsp mustard powder
 1 tbsp ground ginger
 2 tbsp sweet paprika
 1½ tbsp garlic salt
 1 tsp monosodium glutamate

Spray oil.
