Guacamole
Guacamole, the dull green flavourless dip you inevitably get with Mexican / Tex Mex meals, has always been a disappointment to me. I always had to ask myself 'why? I mean WHY?'. Because it was rubbish, there nothing attractive about it at all. And then I started making my own, using this guacamole recipe. And now I know why anyone would bother to eat guacamole: if it's made right, it's delicious. And very quick and easy to make.

Chicken Kiev
Back in the 1970s and 80s, when Britain was discovering a whole new world of cuisine, chicken Kievs were on the menu of every restaurant that thought itself the slightest bit sophisticated. Sadly, you almost never see them now (although I suspect you can still buy rubbishy frozen ones). But do not despair - you can make them yourself, it's not really difficult, and they will be the best chicken Kievs you've ever had.

Flapjacks
In most of the world, flapjacks are soft oat biscuits (or cookies). Except in North America and South Africa, where they look like Scotch Pancakes. This recipe is for British flapjacks. It's very easy, and the flapjacks are utterly delicious.

Golden Syrup
Golden syrup is used in many cake and biscuit / cookie recipes. It can be quite expensive, depending on where you live. But did you know you can make your own? All it takes is sugar, water, a bit of lemon juice and about an hour.

Pho - Vietnamese Beef and Noodle Soup
Pho (pronounced like 'fur' but without sounding the 'r') is the national dish of Vietnam. It's a soup of rice noodles and beef in an intensely flavoured beef broth. The Vietnamese eat pho at any time of day, especially at breakfast. The name is thought to come from when Vietnam was a French colony - pho is an Asianised version of the French dish pot-au-feu. The broth takes care and time to make, so make a large quantity and freeze any that you don't use within a week.

Albóndigas en Salsa - Meatballs in Sauce
These little meatballs are quite popular in restaurants and cafés all over Spain. It's one of those dishes where everyone's mother has her own recipe, and hers is unquestionably the best. Unusually for Spanish meals, albóndigas actually come with a bit of gravy.

Melton Mowbray-style Pork Pie
A good pork pie is a wonderful thing. Flavoursome pork coated in jelly and encased in crispy pastry. But 'Melton Mowbray Pork Pie' is now an EU protected name, so this is *not* a Melton Mowbray pork pie. Sorry 'bout that.

Bangers and Mash
Bangers and Mash is simply sausages served with mashed potatoes. Nothing exotic or complicated about it, but it's delicious, cheap, and filling. And very easy to make!

Onion Gravy
Many savoury dishes benefit from the moisture provided by gravy. But if you are not cooking a roast with its delicious juices, this a great way to make a really tasty gravy.

Toad in the Hole with Onion Gravy
Toad in the hole is a simple British dish of sausages baked in Yorkshire pudding batter. Served with onion gravy and peas, it makes a simple, tasty and cheap meal.

Quick Christmas Pudding with Brandy Butter
This is the traditional Christmas pudding with a twist. It's lighter and quicker than traditional recipes - and you don't have to start making it in November! You can do this in one day.

Eggnog
Eggnog is a delicious winter drink, especially around Christmas time. It's very popular in the US and Canada, and quite similar to the Dutch Advocaat. This recipe is custard-based, so the eggs are cooked and nobody has to worry about salmonella.

Real Tomato Soup
I recently tried some Heinz tomato soup. I used to adore this as a kid, but as an adult, meh. This is my recipe for real home-made tomato soup, made from real tomatoes, and it's real tasty. Also easy to make and cheap too.

Victoria Sponge Sandwich Cake
Victoria sponge has got to be the classic British cake. Light and crumbly sponge with a layer of strawberry jam and buttercream in the middle. This Victoria sponge sandwich cake recipe is easy to make and irresistibly yummy!

Moussaka
I wouldn't say this is an authentic Greek recipe for moussaka, but it's certainly tasty. A rich minced meat and tomato sauce, layered with aubergine (eggplant) and topped with a creamy bechamel sauce. I don't know any Greeks to try this moussaka on, but I'm sure they'd love it!

Pork and Beans
Pork and beans is easy, cheap and tasty, and so much better than canned baked beans. And if you have a pressure cooker, it takes less than an hour to make.
