Cranachan
The Scottish dessert, cranachan, is frequently served at the end of a Burn's Supper. Originally it would have been made with crowdie, a kind of soft cheese, but cream is a good substitute.

Christmas Yule Log
This traditional Christmas cake was invented in France, where it is known as 'bûche de Noël'. It's basically a chocolate Swiss roll covered in chocolate ganache and make to look like a log. Quite easy to make and very impressive to look at.

General Tso's Chicken
General Tso's Chicken is a very popular dish in American Chinese restaurants, but less well-known in the UK. It's a bit like the sweet and sour pork we get in UK Chinese takeaways, except the batter is crispy and the sauce doesn't glow in the dark.

Chicken, Leek and Bacon Pie
Chicken and ham, or chicken and bacon, are classic combos for a tasty pie filling. The addition of leek adds something extra. Yumminess, maybe.

Roast Pork with Braised Red Cabbage
This is a complete meal and the flavour balance between the various components is truly marvellous - sweet tender pork wrapped in smoky bacon contrasted with sweet/sour red cabbage, zingy mustard mashed potato all dribbled with smooth velvety gravy.

Everybody loves chocolate brownies, don't they? With their slightly crispy top and bottom and chewy gooey interior, they are a treat.

Paella
Paella (pronounced 'pie-yay-ya', not 'pie-ella') must be one of Spain's most famous dishes. It was invented in Valencia and people get very heated about what goes into an 'authentic' paella. To be honest, I'm not a total purist (we actually had a paella at the Valencian restaurant that claims to have invented it, and we were not impressed), but I'd never put chorizo in it. What I'm making here is more or less what you would get at a restaurant in Madrid - Paella Mixta.

Southern Fried Chicken
Everybody loves fried chicken, don't they? But maybe the 'fried' bit puts them off. In this recipe, the chicken is briefly fried, and then finished off in the oven. It's delicious and easy.
