Bubble and Squeak

Introduction & method

Bubble and squeak is a brilliant way to use up leftover mashed potatoes and vegetables. It goes really well with a Full English Breakfast, although you hardly ever see it in cafés.

Bubble and Squeak Recipe

Mix together the potatoes, vegetables and seasoning, and form into 4 round cakes. Heat some oil in a frying pan and cook the bubble and squeak for about 5 minutes each side. Some people like to do their bubble as one large slab and then cut it up at the end, but I think the cakes are easier to deal with. The aim with bubble and squeak is to get a nice, crispy burnt skin on it - not always easy to do, but practice makes perfect!
