Pork and Beans

Introduction & method

Pork and beans is easy, cheap and tasty, and so much better than canned baked beans. And if you have a pressure cooker, it takes less than an hour to make.

Pork and Beans Recipe

Remove any skin and bones from the pork, and cut into bite-sized pieces. Peel the onion and chop small. Place pork and onion in a large saucepan or pressure cooker, and add the rinsed beans (I don't think there's any need to soak these little beans) and smoked paprika. Add enough water to cover everything.

If you are using a pressure cooker, put the lid on, bring it up to pressure, and cook for 25 minutes. If you don't have a pressure cooker, bring the saucepan to the boil, put a lid on it and simmer until the beans are cooked - this may take 1-2 hours.

When the beans are cooked, boil rapidly until the sauce has reduced and thickened somewhat.

 250 grams belly pork
 200 ml tomato puree
 1 medium onion
 2 tsp smoked paprika
