Easter is a big thing in Spain, and one thing the Spanish love to eat around this time is torrijas. Torrijas are similar to French toast, pain perdu and bread and butter pudding. Torrijas are very simple to make and they taste delicious.
How to make Torrijas
Break the cinnamon into small pieces and put into a pan with the milk and honey. Gently heat the mixture until the honey has dissolved. Leave to stand for about five minutes until the cinnamon has infused its flavour into the milk. Pour it into a flat dish and add the bread in a single layer. If the milk doesn't cover the bread, turn it over so both side are moist.
When the bread has absorbed all of the milk (about 15 minutes - possibly longer depending on how stale your bread is), beat the eggs into a bowl and heat some oil in a frying pan. Dip each slice of bread in the egg, making sure it's coated all over. Fry the bread for 3-4 minutes each side until golden.
