Introduction & method

This tasty British classic isn't really a pie (in my book, that involves pastry), but the savoury minced beef base topped with creamy mashed potato is certainly delicious.

Shepherd\'s Pie Recipe

For the meat sauce

Chop the onion and fry in a little vegetable oil until soft, then add the beef. Stir the beef around until it is brown. Add the stock, pepper and parsley and bring to the boil, then reduce the heat and simmer for 25 minutes. Chop the carrots into small dice (about 1cm / .5 inch), add to the sauce and cook for a further 5 minutes.

For the potato topping

Peel the potatoes and cut into chunks. Boil in salted water until tender - about 20 minutes. Drain the potatoes and mash in the butter, milk, salt, pepper and chives.

Place the meat sauce in a single layer in a casserole dish, and then put it in the fridge for half an hour. This allows the sauce to set a little so that it can support the weight of the potato topping. 

Preheat the oven to 200℃ (390℉). Carefully spread the potato in a single layer on top of the sauce - I find a wide spatula is good for doing this. Smooth the top with a wide knife, making sure the potato is on contact with the dish all around the edge. Make any kind of pattern you like on the surface of the potato - the idea is to form ridges of potato which will catch the heat and brown slightly.

Put the pie in the oven and bake for 30 minutes.

•  500 ml beef stock
•  1 medium onion, finely chopped
•  2 carrotss
•  2 tbsp frozen peas
•  .5 tsp ground black pepper
•  1 tsp parsley
•  500 grams potato
•  50 grams unsalted butter
•  .5 tsp salt
•  .5 tsp white pepper
•  2 tbsp milk
•  1 tsp chives

A little oil for sauteeing

Serves 4 
Prep time: 15 minutes. Sauce setting time: 30 minutes.
Cooking time: 1 hour.
Total time: 1 hour 45 minutes.
